ca′l xabú is a three-star hotel and restaurant in the middle of a difficult to describe place. as its owners, jaime and xermán, say, tradition rules at cal xabú, and they are faithful caretakers of those old customs. it is a place that creates memories for a lifetime, and a human team that considers you family as soon as you cross its doors.
its owners are from the same village, cuérigo, in a calm valley and lush mountains, nestled between aller and nalón. one is a chef and the other a bagpiper, one a student of manzano and the other a mycologist and antique dealer. both created this place with the soul of a museum, where everything catches the eye. chests, benches, pots, soup tureens, all stop being museum pieces when observing the charcoal kitchen, the oven, and the chimney in full swing. the wooden beams, stone walls, and especially the aromas of chestnut stew, spelt bread, their own sausages - la correína seal - or goat and free-range chicken.
opened in 2003, it has a basement, ground floor, and two floors, all connected by an elevator. in the basement, it has public bathrooms, a laundry area, boiler room, industrial refrigerators, and a spectacular wine cellar. it also has a pastry workshop and several warehouses. a dumbwaiter connects the 3 floors.
on the ground floor, adapted for people with disabilities, is the industrial kitchen and the office, two dining rooms, one with a capacity for 40 guests and the other for 25. the dining room, open to the outside with over 80 m2 of windows, offers wonderful views of the aller river valley. the other is a true kitchen museum, a room full of traditional kitchen accessories, charcoal stove, wood oven, fire on the ground, etc.

the first floor has 7 rooms, a large terrace facing south, with views of over 30 km of valley, and a fully glazed hallway. the second floor has 3 rooms. all rooms are exterior and have an en-suite bathroom.
